And chocolate chips.
None of those raisin or fruit nonsense (sorry, I don’t actually mind raisins or fruits in general; I just do now).
Here’s a step-by-step recipe on how to make the simplest most decadent chocolate chip cookies WITHOUT the use of a mixer. May I repeat: you do not need an electric mixer to make these cookies. Yay!
That means no extra mess and fewer dishes to wash.
All you need are your handy hands and a few simple tools.
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/4 cup packed light brown sugar
1/2 cup white granulated sugar
1/2 teaspoon vanilla extract
1 large egg
1 cup semi-sweet chocolate chips
Note: the amounts of chocolate chips can be doubled for extra decadent cookies!
Preheat the oven to 170C.
Start with very soft butter in a bowl.
Use a spatula to soften the butter.
Add the white sugar and brown sugar to the butter.
Blend for about a minute until the mixture looks like this.
Add in the vanilla and egg.
Switch to a whisk and whisk away.
Whisk until well combined.
Now onto the dry ingredients – mix the flour, baking soda, and salt with a whisk. Whisking produces the same effect as sifting.
Now pour in the dry mixture into the wet mixture.
Continue mixing using a spatula until just combined.
It’s okay if there’s a little bit of flour left; do not overmix.
Now for the most fun part: chocolate chip cookies. The recipe calls for 1 cup, but dump in as much as you desire.
Combine the chocolate chips with the mixture until well distributed.
Line a baking sheet with parchment paper and using a sorbet scoop, scoop out the mixture onto the pan.
Stick the pan in a 170C preheated oven for 10 minutes.
And voila! My mixture made a total of 36 medium-sized cookies. I like my cookies soft so I take them out just when they are a little undercooked. They will continue to cook while cooling down. After letting them rest for a few minutes on the pan, transfer the cookies onto a wire rack and let cool.
